Eggplant is one of my favourite vegetables and it has many different recipes. In Chinese food, eggplants can used in many recipes, likes putting in salad, using stir-fries, braising, roasting or even grilling, and it always offers great flavour. It also only contains 0.2g fat, but contains 3% vitamin C and 5% vitamin B-6.
I am the person who really enjoy cooking, especially some simple recipes. Today, I would like to introduce a simple way to cook eggplant by using the Chinese recipes. It is great recipes for people who like spicy food; however, people don't like spicy food and just use the same recipes without using any red chilli peppers. The name of this dish is stir-fries eggplant.
Since I used the Chinese recipe to cook eggplants, you can found out most of my sauces are from T&T supermarket. If you don't have time to the specific supermarket, you can find those ingredients from Walmart.
Firstly, we need to prepare and check the ingredients.
(The type of eggplant will not affect the flavour of this dish.)
(The number of red chilli peppers depend on how you can eat spicy.)
(The amount can be changed based on your preference. If you are the person don't like coriander and green onion, you can just skip these ingredient.)
(Different brand of soy sauce might change the flavour, the picture above is the brand I used which can be found in T&T supermarket.)
(If you don't have the chicken broth, you can use water instead. However, the flavour might be different.)
After we prepared the required ingredients, we can start to cut those ingredients.
1. Wash all the vegetables and remove
2. Cut the eggplants into 4 cm * 2 cm cube(Julienne cut), please make sure they are almost the same shape.
3. Cut green onion and red chilli pepper into small circles; Mince(finely chopped) garlic cloves; and put those ingredients with 1 tablespoon cumin seed. Please be careful with your hand when you cutting staffs. Also, the red chilli pepper is spicy, so remember to wash your hand immediately after you cut the red chilli pepper.
4. Prepare a pan, put 1-2 tablespoon of vegetable cooking oil into the pan. When the pan heat up, you can add green onion, red chilli pepper, chopped garlic cloves and cumin seed in and stir fry about 1 minute.
5. After they become slightly soft, you can add eggplants into the pan.
6. Stir fry and mix eggplants with other ingredients, and add 150 ml chicken broth. When the eggplant become soft, add 2-3 tablespoon light soy sauce into the pan.
7. Garnish chopped coriander and mix them together. Taste one eggplant. If the flavour is not enough, you can add 1 tablespoon salt.
